Today is National Ice Cream Sandwich Day!  To celebrate (and who doesn’t love celebrating anything related to ice cream, just see here), we decided to make an Ice Cream Sandwich Cake.  It is super easy and the kids were able to do much of the work.

The original recipe called “Oreo & Fudge Ice Cream Cake” comes from Kraft.  We’ve adapted it slightly.

Here is what you’ll need:
12 Ice Cream Sandwiches
10 Oreos (more if you want more crunch in the fudge mixture)
1/2 Cup Hot Fudge
1 Pack of Instant Chocolate Pudding
8 oz Tub of Cool Whip
Food Coloring
Sprinkles

 

1.  Crush the Oreos.  Don’t smash them entirely if you want more crunch.

 

 

2.  Mix warmed hot fudge with the Cool Whip.  Add in chocolate pudding powder.  Then add the crushed cookies.
You may notice the “chocolate mouths” start early in the photos.  I took a phone call and little fingers went into the hot fudge jar.  Hmmm.  (I would have done it too.)

 

 

3.  Unwrap the ice cream sandwiches.  This was really hard for Sweet Boy!  He wanted to eat or lick each one.  (Just to be safe, this cake will be enjoyed by our family only.)

 

 

4.  Stack the ice cream sandwiches and spread the fudge mixture over each layer.

 

 

5.  Mix remaining cool whip with your choice of food coloring.

 

 

 

6.  For the “celebration look,” add sprinkles!

 

 

7.  Wrap loosely in foil.  Freeze for at least 4 hours.

 

It was really yummy and the kids loved making it.  I am thinking of trying it with Mint Oreo Cookies next time. Happy National Ice Cream Sandwich Day!
