One of the great things about our Picnic Party was that there wasn’t much for me to cook. That alone can make me party-happy! The exception was the delicious and easy corn casserole.
The recipe comes from my cousin and I always look forward to eating it at large family dinners. But now there is something else to love . . . it is simple to make. This would make a great staple to take to any potluck, family dinner or just enjoy at home. (Small confession: my son and I even at it for breakfast after the party!)
Baked Corn Casserole
(Makes an 8×8. Double for 9×13)
- 1 Box of Jiffy Corn Bread Mix
- 2 Eggs
- 1 Stick of Butter
- 1/2 Pint of Sour Cream
- 1 Can Cream Style Corn
- 1 Can Whole Corn (drained)
Mix together. Bake at 350 degrees for 1 hour.
>>Let people dish up or present single servings in a large cupcake baking cup as we did for our party.
