In honor of National Macaroon Day, I am sharing an “oh, so easy” 3-ingredient recipe for sweet macaroon-style cookies. If you love coconut, you’ll love these.
The THREE Ingredients You Will Need:
A can of sweetened condensed milk
A bag of coconut
Handful of dried apricots (or more to taste)
Instructions:
Chop up a handful of dried apricots. Mix the three ingredients and form mounds on a cookie sheet. Bake at 350 degrees until they begin to brown. It took about 10-15 minutes for me. Cool partially and remove from cookie sheet. Reform if necessary and cool until set. (Makes about 24 cookies.)
*Next time, I will be trying parchment paper on the cookie sheet. I think it will help get the cookies off a little easier.
Enjoy National Macaroon Day with these sweet and delicious cookies . . . but I have to warn you, they will leave you wanting more!
