As I mentioned in last Thursday’s post (oops that is the one that mysteriously disappeared!!), I recently hosted a Thirty-One Gifts house party for a good friend. While these kinds of parties are fun in themselves, I enjoy finding some special treats to serve my guests.
Here were the goodies (if you don’t count the fun, organizing bags):
Lemon Coconut Cupcakes – this is my all time favorite cupcake recipe! It is from one of my cupcake/little cake books,
Little Cakes from the Whimsical Bakehouse. I would love to be sharing the recipe with you but it wouldn’t be right since it is their creation. You can get the book on
Amazonor just check it out from your library. That is what I did until I decided I should own it. The Whimsical Bakehouse used to have the Kids’ Buttercream recipe on their site, but sadly no longer.
Oreo Truffles – These were yummy and so simple! Just crush a bag of oreos, add 8oz of softened cream cheese and mix until smooth. Refrigerate and then roll into balls. Chill again (I just stuck them in my freezer for 5 minutes). Melt the chocolate of your choice and dip the oreo balls. Let them dry on wax paper. I added a pink drizzle to make them pretty.
Stuffed Strawberries – This was another simple recipe and absolutely delicious! Wash and core the strawberries. Mix 8 oz of softened cream cheese, 1/2 cup powdered sugar and 3/4 teaspoon of almond extract. I used a pastry bag and Wilton #21 tip to fill the strawberries and add a swirl top.
The signs and cupcake wrappers were made with my amazing Silhouette Cameo (you can read more about it here). I loved the combination of these three desserts, but each could also stand alone for a go-to dessert when you need to take a treat somewhere.
